Egg Unlimited is Melbourne's original wholesale bakery of handmade miniature breads.  Situated in Elsternwick, our bakery and catering production kitchen create beautiful canapes, hampers and lunch boxes for Melbourne's largest firms and major event venues.
We are currently looking to welcome an experienced Sous/Production Chef into our team on a full time basis where you will become an integral part of our management team.  Working closely with our Head Chef, we are seeking a talented, dynamic and passionate professional who will contribute their creativity and knowledge to lead and mentor our talented team of kitchen staff to provide a consistent high level of customer service.
Job tasks and responsibilities
Duties of this role:
Supervise, coach and oversee all kitchen staff to maintain portion, waste and cost controls Coordinate the preparation of all catering items efficiently, professionally and to consistently high standards Working with the Head Chef to manage stock levels and costs to maximise profitability and team performance Assist with menu and new product development, and business growth strategies Assist with staff rostering and training Maintenance of all equipment and machinery, and cleaning schedules Maintain Health & Safety and Food Safety Standards in line with company policy Running the kitchen in the absence of the Head Chef
Skills and experience
To be successful in this role, ideally you must:
Have experience in a high volume commercial production kitchen Have extensive knowledge and experience of the catering industry Be committed to providing exceptional customer service, with good organisational and time management skills Possess strong leadership skills with a focus on staff development, and a proven ability to build effective relationships Communicate clearly and concisely Be competent in all aspects of cooking with excellent attention to detail Be reliable, presentable, punctual and hardworking Have the ability to work unsupervised, and work well in a fast paced team environment Have excellent food hygiene standards, and a strong understanding of HACCP food safety standards Be able to work across a well-structured rotating roster
